Cookie Pizza Saga - 3 years in the making - Chapter 4 (with recipes!)

Chapter 4 - Present day - 2nd grade
Here I am again making these mini cookie pizzas to take into school. I got out my recipe and tried it again with the changes from last time. Finally, after 3 years of trying, I finally got the recipe figured out!!! Yay for me!!!!!

Get out your ingredients: sugar cookie dough, sweetened condensed milk, chocolate chips, m&ms and marshmallows

Slice the cookie dough (little less than 1/4" wide)

skoosh (squish + push) the slices into the cupcake liners


Measure out 1/2 cup of sweetened condensed milk and 1/3 cup of chocolate chips.  Don't measure out a level 1/3 cup of chocolate chips or a heaping 1/3 cup.  Basically you need 1/3 cup plus a few more chocolate chips.

Melt on low in a small sauce pan stirring frequently.

spoon a little onto each cookie

add the m&ms and bake at 350 for 5 minutes

pull them out and add a couple of marshmallows

put them back in for 4-7 more minutes (until the cookies start to turn golden brown)

all done!

Cookie Pizza - Individuals (yields 20-24 pizzas)

1 roll of refrigerated sugar cookie dough (16.5 oz size)
1/2 cup Sweetened Condensed Milk
1/3 cup Chocolate Chips (not a level 1/3 cup)
M&M's
Marshmallows

Line cupcake pans with cupcake liners.

Slice roll of cookie dough almost 1/4" wide and place in bottom of cupcake liners (might have to skoosh it some to get it to fit)

In small saucepan, melt chocolate chips in sweetened condensed milk. Once melted, spoon some chocolate sauce on top of the cookie dough (the size of a quarter or a little more). Before the sauce sets up, add some M&M's.

Bake at 350 for 5 minutes. Take out and add marshmallows to each pizza. Put back in oven for 4-7 more minutes (watch for dough to start browning). Once you take them out, they will deflate. Let them cool before removing from cupcake pan.

Cookie Pizza -  full size pizza  *I am using a 14.25" pizza pan by Wilton*

Set the roll of cookie dough out for a little bit to soften up.  Spread onto a pizza pan leaving about 2" or so around the edge.  The dough will spread and you don't want it spreading off of the cookie sheet and onto your oven! 
 
 
 
Pour the chocolate sauce on the pizza and add m&ms.
 
 
 
Bake at 350 for 5 minutes.
 
 
 
Add the marshmallows
 
Put the pizza back in the oven for 4-7 more minutes
 
All done!

See how the dough went all the way to the edge?  If we hadn't left enough room for the dough to spread, it would have went all over the oven!!!

Let it cool and then get a pizza slicer and slice some cookie pizza!
